Ellen's favorite Think Tomato recipe!
This parmigiana is warm, hearty and easy to make!

Serves 2

  • 1 jar Think Tomato
  • 2 eggplants
  • 250 gr mozzarella or burrata- parmesan or gruyere of your choice
  • Olive Oil
  • Salt and pepper

How to make it?

  1. heat the oven to 180°C
  2. wash and dry the eggplant
  3. cut the eggplant into thin slices
  4. sprinkle with olive oil, salt and pepper
  5. Cook the eggplant in the oven for 20 minutes
  6. Place the mozzarella or burrata on top of the eggplant, add the think tomato sauce and finish with parmesan shavings
  7. Cook in the oven for another 10 minutes
  8. Serve and enjoy!
